It ranges in quality and flavor from awesomely delicious to lukewarm, tasteless, and gloopy. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">There was a time when I never thought to make it myself and resigned myself to the luck of the draw when it came to ordering it. So imagine my surprise when my dad said he not only knew how to make it, he had a family recipe for it. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">This hot and sour soup recipe is the best hot and sour soup I\u2019ve had. And I\u2019m not just saying that! A big part of it is&#8230;when you make it at home, you can control heat and sourness levels yourself. I\u2019m crazy for anything with vinegar in it. If you\u2019re like me, you can add some more vinegar to your bowl. If you like it hotter, add more white pepper.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">This soup is like\u2026the most authentic take-out hot and sour soup you\u2019ve ever had, and yet\u2026WAY better than all those take-out places combined. While I find that many takeout restaurants today are heavy on the grease while skimping on flavor, our goal is to really do each dish justice. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">My dad and mom brushed up on old skills and recipes from our family\u2019s restaurant days to record recipes on the blog like this hot and sour soup. <\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Our Stance on Chinese Takeout<\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">I\u2019m Chinese, and I must say, I love American Chinese takeout food. If you\u2019ve ever wondered about our stance on the Peking Kitchens, Hunan Gardens, and Jade Palaces of the world\u2013\u2013whether we relegate these operations\u2019 offerings to just late-night fodder or not \u201creal\u201d Chinese food\u2013\u2013I can tell you that while we love sharing authentic, traditional Chinese recipes, we also love covering recipes for Hot and Sour Soup, <\/span><a href=\"https:\/\/thewoksoflife.com\/sesame-chicken\/\"><span style=\"font-weight: 400;\">Sesame Chicken<\/span><\/a><span style=\"font-weight: 400;\">, and other dishes you may find yourself craving at inappropriate hours of the day.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Because although some of these dishes may be a little more Daniel Boone than they are Confucius, they have a place in our culinary hearts. Prepare your pork:<\/b><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Combine the 4 oz. julienned pork shoulder with 1 tablespoon water until the meat has absorbed the water. Add a pinch of salt, 2 teaspoons vegetable oil, and 1 teaspoon <a href=\"https:\/\/thewoksoflife.com\/rice-grains-and-flours\/#cornstarch\" target=\"_blank\" rel=\"noopener noreferrer\">cornstarch<\/a> and mix until combined. Set aside.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><b>2. Prepare your dry ingredients: <\/b><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Cut the <a href=\"https:\/\/thewoksoflife.com\/chinese-spices-condiments\/#red-dried-chili-peppers\" target=\"_blank\" rel=\"noopener noreferrer\">dried chilies<\/a> in half and discard the seeds. Mince them up and set aside. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">In separate bowls, soak the <a href=\"https:\/\/thewoksoflife.com\/chinese-dried-preserved-ingredients\/#dried-lily-flowers\" target=\"_blank\" rel=\"noopener noreferrer\">dried lily flowers<\/a>, <a href=\"https:\/\/thewoksoflife.com\/chinese-dried-preserved-ingredients\/#wood-ears\" target=\"_blank\" rel=\"noopener noreferrer\">wood ears<\/a>, and <a href=\"https:\/\/thewoksoflife.com\/chinese-dried-preserved-ingredients\/\" target=\"_blank\" rel=\"noopener noreferrer\">shiitake mushrooms<\/a> in 1 cup of water each for 1-2 hours, until hydrated. Using hot water (like you\u2019re brewing tea) will significantly speed up the process.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Once they\u2019re ready, thinly slice the mushrooms and give the wood ears a rough chop. Trim the tough ends off the lily flowers and cut them in half.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><b>3. Prepare the tofu and the rest of the ingredients:<\/b><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Cut both the <a href=\"https:\/\/thewoksoflife.com\/chinese-tofu-bean-curd\/#spiced-tofu\" target=\"_blank\" rel=\"noopener noreferrer\">spiced tofu<\/a> and the <a href=\"https:\/\/thewoksoflife.com\/chinese-tofu-bean-curd\/#firm-tofu\" target=\"_blank\" rel=\"noopener noreferrer\">firm tofu<\/a> into 2-inch long and \u00bc-inch thick pieces. Julienne the <a href=\"https:\/\/thewoksoflife.com\/asian-vegetables-beans-melons\/#bamboo-shoots\" target=\"_blank\" rel=\"noopener noreferrer\">bamboo shoots<\/a>. Beat the egg in a small bowl. Assemble the soup:<\/b><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Bring the <a href=\"https:\/\/thewoksoflife.com\/homemade-chicken-stock\/\" target=\"_blank\" rel=\"noopener noreferrer\">chicken stock<\/a> to a boil in a <\/span><a href=\"https:\/\/thewoksoflife.com\/best-wok-to-buy\/\"><span style=\"font-weight: 400;\">wok<\/span><\/a><span style=\"font-weight: 400;\"> or pot. If the pork has clumped and stuck together, it is best to add another tablespoon of water to loosen it up before adding it to the soup.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Stir in the pork and quickly break up any clumps that may form. Once the soup is simmering again, skim off any foam that floats to the top with a<\/span><a href=\"https:\/\/thewoksoflife.com\/how-to\/chinese-cooking-tools\/#fine-mesh-strainer\"> <span style=\"font-weight: 400;\">fine meshed strainer<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" width=\"600\" height=\"399\" src=\"https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/04\/hot-and-sour-soup-4.jpg\" alt=\"Chicken Stock with Pork Added, thewoksoflife.com\" class=\"wp-image-25404\" srcset=\"https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/04\/hot-and-sour-soup-4.jpg 600w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/04\/hot-and-sour-soup-4-90x60.jpg 90w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/04\/hot-and-sour-soup-4-340x226.jpg 340w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/04\/hot-and-sour-soup-4-110x73.jpg 110w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure><\/div>\n\n\n<p><span style=\"font-weight: 400;\">Add the salt, sugar, dried chili pepper (if using), <a href=\"https:\/\/thewoksoflife.com\/chinese-spices-condiments\/#white-pepper\" target=\"_blank\" rel=\"noopener noreferrer\">white pepper<\/a>, both <a href=\"https:\/\/thewoksoflife.com\/chinese-sauces-vinegars-oils\/\" target=\"_blank\" rel=\"noopener noreferrer\">soy sauces<\/a>, and <a href=\"https:\/\/thewoksoflife.com\/chinese-sauces-vinegars-oils\/#sesame-oil\" target=\"_blank\" rel=\"noopener noreferrer\">sesame oil<\/a>.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Next, add the lily flowers, wood ears, shiitake mushrooms and bamboo shoots and bring the soup to a simmer once again.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Next, add the two kinds of tofu and the vinegar and stir. Ensure it\u2019s well-combined, as the cornstarch tends to settle to the bottom of the bowl.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Bring the mixture to a simmer and use your soup ladle to stir the soup in a steady circular motion to make a whirlpool while slowly drizzling in the cornstarch slurry. This prevents the cornstarch from clumping. Taste and adjust to the way YOU like it:<\/b><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Once the soup is the thickness you prefer, use a spoon to check its flavor and adjust things to your own personal preference. Add more white pepper if you like it hot and add more vinegar if like it sour! White pepper gives the soup its signature heat, and the vinegar levels can be adjusted according to how sour you like your hot and sour soup.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Keep the soup simmering (it should be bubbling before you add the egg, or the soup will turn cloudy when the egg is added), and begin stirring in a circular motion with your ladle once again. Once you get the soup moving in a slowly swirling motion, slowly drizzle the beaten egg into the soup.
