The freezer staples I can\u2019t do without are <\/span><a href=\"https:\/\/thewoksoflife.com\/20-minute-congee-recipe\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">frozen rice<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><a href=\"https:\/\/thewoksoflife.com\/whole-wheat-mantou\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">frozen man-tou<\/span><\/a><span style=\"font-weight: 400;\">, frozen <\/span><a href=\"https:\/\/thewoksoflife.com\/dumpling-recipe-youll-ever-need\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">dumplings<\/span><\/a><span style=\"font-weight: 400;\"> and finally, some sort of savory bun, like these steamed pork buns <em>(baozi, <\/em>\u5305\u5b50 in Chinese)<em>.<\/em>&nbsp;&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">They\u2019re my emergency meal source! With these on hand, I\u2019m never more than 30 minutes away from a satisfying meal that\u2019s also grab-and-go. I love to make my own steamed buns, because I get to decide which delicious fillings I\u2019m going to make.<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Pleating Buns: Not Actually Required!<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">People tend to shy away from making steamed buns from scratch because they\u2019re daunted by the pleating and folding step.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">That does take practice, but you can also completely do away with the pleating by simply closing the top tight and turning the bun over. But since no one is looking, and there really aren\u2019t any rules here, feel free to turn your savory buns upside down and keep that trivial fact to yourself!<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>An Important Tip for Sealing Steamed Buns<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Whether you decide to pleat or not, make sure your hands are completely dry while making the buns, and avoid getting any liquid from the filling on your hands or the outside of the dough near the point of closure. This will make it almost impossible to seal the buns.&nbsp;&nbsp;&nbsp;<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Something to Consider: Grinding Meat for the Filling&nbsp;<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">This recipe calls for ground meat. But this extra 5-minute step really makes a difference to the quality of your steamed pork buns. Wait 10-15 minutes to let the yeast become active and foam up.&nbsp;&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Add in the flour \u00bd cup at a time and knead for about 15 minutes. Adjust the last \u00bd cup flour accordingly. The dough should be soft\u2013\u2013not sticky and not too firm. (If kneading by hand, knead the dough until it\u2019s as smooth as a baby\u2019s butt!)<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">While it\u2019s proofing, make the filling.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><b>Make the filling:<\/b><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Add the ground meat to a large mixing bowl and stir in 3 tablespoons water until well incorporated.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Now preheat the wok or a cast iron pan until it starts to smoke lightly. Add in 3 tablespoons oil, along with the minced ginger and diced onion. Cook until all the pork turns pale and opaque\u2013\u2013there is no need to brown or crisp the meat.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Add wine, dark soy sauce, sweet bean sauce, ground bean sauce, oyster sauce, sugar, white pepper, and sesame oil. With the heat on high, stir everything together until well-combined. Stir in the cornstarch and water mixture, allowing everything to bubble together for 30 seconds to a minute. Knead for 2 minutes to get rid of any air pockets. <\/span><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" width=\"600\" height=\"399\" src=\"https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/06\/pork-baozi-7.jpg\" alt=\"Kneading dough, thewoksoflife.com\" class=\"wp-image-29376\" srcset=\"https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/06\/pork-baozi-7.jpg 600w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/06\/pork-baozi-7-90x60.jpg 90w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/06\/pork-baozi-7-340x226.jpg 340w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2019\/06\/pork-baozi-7-110x73.jpg 110w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure><\/div>\n\n\n<p><span style=\"font-weight: 400;\">Weigh and divide the dough into 20 equal pieces (each should weigh about 48g-50g).<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Take each dough ball, and with a rolling pin, roll it from the edge towards the center, without actually rolling the center of the dough. The goal is to flatten the dough into a round circle with a thinner edge and thicker center. The difference in thickness should be about 1:2. Add some filling to the center.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">You can start with a smaller amount of filling until you get the hang of the folding\/pleating. The buns are folded with one hand holding the skin and filling, and the other hand pleating the edges of the dough disk like an accordion. As you fold, the goal is to make it all the way around the circle, until you\u2019ve sealed it at the top. Repeat until all are assembled. Let the buns proof (covered) for another 15 minutes before steaming.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">If you\u2019d rather not pleat the buns at all, simply pinch the edges of dough around the filling and pinch to seal tightly. You can use whatever steaming apparatus you normally use (refer to our post on <\/span><a href=\"https:\/\/thewoksoflife.com\/how-to-steam-food\/\"><span style=\"font-weight: 400;\">how to steam food<\/span><\/a><span style=\"font-weight: 400;\"> with a bamboo steamer, metal steamer or even without special equipment).&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Just remember: boiling water should never directly touch the buns during steaming. Also avoid sticking by brushing oil onto the steaming surface or adding a nonstick surface like napa cabbage leaves or parchment paper. If using a bamboo steamer, brush the sides of the steamer with oil, as the buns expand and might stick to the sides. The surface the buns sit on should be porous, not solid (like a plate). This will trap moisture and make the buns soggy. There should be some aeration going on. Finally, make sure the lid is tight so you don\u2019t lose any steam.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">With the buns in the steamer, start with cold water and turn on the heat to medium. Set the timer to 15 minutes.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">After 15 minutes, turn off the heat, and keep the lid on. Let the buns \u201crest\u201d for 5 minutes before opening the lid. Knead for 2 minutes to get rid of any air pockets. Weigh and divide the dough into 20 equal pieces (each should weigh about 48g-50g).<\/span><\/div><\/li><li id=\"wprm-recipe-34187-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Take each dough ball, and with a rolling pin, roll it from the edge towards the center, without actually rolling the center of the dough. The goal is to flatten the dough into a round circle with a thinner edge and thicker center. The difference in thickness should be about 1:2. Add some filling to the center.<\/span><\/div><\/li><li id=\"wprm-recipe-34187-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">You can start with a smaller amount of filling until you get the hang of the folding\/pleating. The buns are folded with one hand holding the skin and filling, and the other hand pleating the edges of the dough disk like an accordion. As you fold, the goal is to make it all the way around the circle, until you\u2019ve sealed it at the top. You\u2019ll be making about 10-15 folds. Lay the buns on a small piece of parchment paper and put it directly on your steaming rack. Repeat until all are assembled. Let the buns proof (covered) for another 15 minutes before steaming.<\/span><\/div><\/li><li id=\"wprm-recipe-34187-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">If you\u2019d rather not pleat the buns at all, simply pinch the edges of dough around the filling and pinch to seal tightly. Then simply flip the buns seam side down, cover, and proof for 15 minutes.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">To steam: <\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-34187-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">With the buns in the steamer, start with cold water and turn on the heat to medium.
