{"id":59555,"date":"2021-10-23T00:03:00","date_gmt":"2021-10-23T04:03:00","guid":{"rendered":"https:\/\/thewoksoflife.com\/?p=59555"},"modified":"2023-01-26T15:15:14","modified_gmt":"2023-01-26T20:15:14","slug":"pork-and-celery-dumplings","status":"publish","type":"post","link":"https:\/\/thewoksoflife.com\/pork-and-celery-dumplings\/","title":{"rendered":"Pork and Celery Dumplings"},"content":{"rendered":"\n<p>These Chinese pork and celery dumplings (with sweet carrots) are super delicious, and another dumpling recipe we\u2019re adding to our permanent repertoire!&nbsp;<\/p>\n\n\n\n<p>While pork and celery dumplings may sound strange to American or Western ears, it\u2019s actually a very popular combination in China.<\/p>\n\n\n\n<p>What\u2019s particularly great about this recipe is that you don\u2019t need to find a specific Chinese vegetable like napa cabbage, bok choy, or shepherd\u2019s purse to make them. Everyone can find celery and carrots!&nbsp;&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">What Is Chinese Celery?&nbsp;<\/h2>\n\n\n\n<p>Chinese celery, also known as leaf celery, has a stronger celery flavor than regular celery. Carrots add sweetness to dumpling and bun fillings, and offer a balance to the celery flavor, and the spicy minced ginger. <\/p>\n\n\n\n<p>Any dumpling filling is all about balancing flavors!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Dumpling Wrappers: Homemade vs. Store-bought<\/h2>\n\n\n\n<p>This recipe includes instructions on how to make your own dumpling wrappers, but there is absolutely nothing wrong with using store-bought. <\/p>\n\n\n\n<p>I happened to make my own wrappers this time, because I didn\u2019t have any store-bought wrappers on hand and didn\u2019t feel like going to the store.&nbsp;<\/p>\n\n\n\n<p>I did have the ingredients for dumpling wrappers (most people do!): all purpose flour and water. <\/p>\n\n\n\n<p>While making the dough takes a little time, and rolling out the wrappers yourself does extend the assembly process a little bit, it\u2019s not that much harder to make your own. Especially if you have help from friends or other family members!&nbsp;<\/p>\n\n\n\n<p>Ok, let\u2019s talk about how to make these.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Recipe Instructions<\/h2>\n\n\n\n<p>If you\u2019re making your own dumpling wrappers, start by preparing the dough. Put the flour in the bowl of a stand mixer fitted with the dough hook attachment. <\/p>\n\n\n\n<p>With the mixer on low speed, gradually add the water. Gradually add the water to the flour and knead into a smooth dough. This process should take about 10 minutes.) Allow the oil to infuse for 10 minutes. Turn off the heat and cool completely. <\/p>\n\n\n\n<p>If not using Sichuan peppercorns, simply cook the oil over medium heat for 5 minutes, and let cool. <\/p>\n\n\n\n<p>This \u201ccooked\u201d oil will give the dumplings more flavor than you\u2019d get by simply adding raw oil to the filling.&nbsp;<\/p>\n\n\n\n<p>Heat the remaining 1 tablespoon of vegetable oil in a small pan or wok over medium heat. Fry the carrots in the oil until the carrots are slightly softened, about 2 minutes. Turn off the heat and cool completely.&nbsp;<\/p>\n\n\n\n<p>Squeeze out the excess water from the celery, and add to the bowl of your stand mixer (or a large mixing bowl), along with the cooked and cooled carrot, minced scallions, minced ginger, ground pork, sugar, sesame oil, oyster sauce, and soy sauce.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1300\" height=\"921\" src=\"https:\/\/thewoksoflife.com\/wp-content\/uploads\/2021\/10\/pork-celery-dumplings-4.jpg\" alt=\"Pork and celery dumpling filling ingredients in stainless steel mixing bowl\" class=\"wp-image-59560\" srcset=\"https:\/\/thewoksoflife.com\/wp-content\/uploads\/2021\/10\/pork-celery-dumplings-4.jpg 1300w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2021\/10\/pork-celery-dumplings-4-85x60.jpg 85w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2021\/10\/pork-celery-dumplings-4-599x424.jpg 599w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2021\/10\/pork-celery-dumplings-4-340x241.jpg 340w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2021\/10\/pork-celery-dumplings-4-650x461.jpg 650w, https:\/\/thewoksoflife.com\/wp-content\/uploads\/2021\/10\/pork-celery-dumplings-4-110x78.jpg 110w\" sizes=\"(max-width: 1300px) 100vw, 1300px\" \/><\/figure>\n\n\n\n<p>Turn on your mixer (fitted with the paddle attachment) on low speed, and gradually stream in the Shaoxing wine and water. <\/p>\n\n\n\n<p>Continue mixing on low speed for 5-7 minutes, until the mixture has emulsified, absorbed the added liquid, and resembles a sticky paste. Alternatively, mix by hand with a pair of chopsticks in 1 direction for 10 minutes, or as long as it takes to yield an emulsified paste (see photo below).&nbsp;<\/p>\n\n\n\n<p>If you do not mix long enough, your filling may look wet and result in a grainy texture after cooking. <\/p>\n\n\n\n<p>Remove the peppercorns from the cooled oil, and add the oil to the filling mixture. Mix again on low speed for 1 minute, just until the oil is emulsified into the mixture. Then transfer to a freezer bag and store for up to 3 months. making your own dumpling wrappers, start by preparing the dough. Put the flour in the bowl of a stand mixer fitted with the dough hook attachment. With the mixer on low speed, gradually add the water. When a dough forms, continue kneading on low speed for about 8 minutes. (Alternatively, put the flour in a large mixing bowl. Gradually add the water to the flour and knead into a smooth dough. This process should take about 10 minutes.) Cover with an overturned plate and let the dough rest for 1 hour.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">To make the filling:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-59571-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Take your minced celery, and add 1 teaspoon salt. Allow to sit for 30 minutes, and the celery will sweat out excess water. <\/span><\/div><\/li><li id=\"wprm-recipe-59571-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">In a small saucepan or pot, add 3 tablespoons of vegetable oil and the Sichuan peppercorns, if using. Place over medium heat, and when the oil starts to bubble around the peppercorns, turn the heat down to medium low. Allow the oil to infuse for 10 minutes. Turn off the heat and cool completely. If not using Sichuan peppercorns, simply cook the oil over medium heat for 5 minutes, and let cool. This \u201ccooked\u201d oil will give the dumplings more flavor than you\u2019d get by simply adding raw oil to the filling.<\/span><\/div><\/li><li id=\"wprm-recipe-59571-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Heat the remaining 1 tablespoon of vegetable oil in a small pan or wok over medium heat. Fry the carrots in the oil until the carrots are slightly softened, about 2 minutes. Turn off the heat and cool completely.<\/span><\/div><\/li><li id=\"wprm-recipe-59571-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Squeeze out the excess water from the celery, and add to the bowl of your stand mixer (or a large mixing bowl), along with the cooked and cooled carrot, minced scallions, minced ginger, ground pork, sugar, sesame oil, oyster sauce, and soy sauce. <\/span><\/div><\/li><li id=\"wprm-recipe-59571-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Turn on your mixer (fitted with the paddle attachment) on low speed, and gradually stream in the Shaoxing wine and water.<\/span><\/div><\/li><li id=\"wprm-recipe-59571-step-1-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Continue mixing on low speed for 5-7 minutes, until the mixture has emulsified, absorbed the added liquid, and resembles a sticky paste. Alternatively, mix by hand with a pair of chopsticks in 1 direction for 10 minutes, or as long as it takes to yield an emulsified paste. If you do not mix long enough, your filling may look wet and have a grainy texture after cooking. <\/span><\/div><\/li><li id=\"wprm-recipe-59571-step-1-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Remove the peppercorns from the cooled oil, and add the oil to the filling mixture. Mix again on low speed for 1 minute, just until the oil is emulsified into the mixture. That\u2019s the filling!<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">To assemble the dumplings: <\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-59571-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">If you made homemade dumpling wrappers, divide the dough into small pieces (each piece should weigh about 15-20g), and roll it into a ball in your hands. Flatten the ball on a clean, smooth surface (such as a cutting board or clean countertop), and roll into a thin 3\u00bd inch circle. Place about 1 tablespoon of filling in the middle, and pleat the dumplings closed. <\/span><\/div><\/li><li id=\"wprm-recipe-59571-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">If using store-bought dumpling wrappers, moisten the outer edges of the wrapper, and add 1 tablespoon of filling in the middle. Pleat the dumpling closed, using additional water to make sure the dumpling is fully sealed.
